For those looking to spend a little more than a cast iron pan might be a better solution. Normally used in commercial cooking or in ovens which have a high constant temperature, for example an AGA, cast iron pans are extremely strong and durable and retain a great deal of heat.
A good example of a pan that works well with cast iron is a frying pan. An even heat distribution and a good range of temperature are essential for frying anything from the basic fried eggs right through to simmering a risotto. Although cast iron takes a little longer to heat, once it has reached its optimum temperature it provides a steady and consistent even heat, thus making it a great choice to simmer food.
An essential part of your pan collection could also be a decent steamer. With society increasingly turning towards a focus on healthy eating, steaming food has gained increasing popularity. Steaming vegetables and fish in particular are popular in health circles due to the lack of additives needed to prepare them. Steaming is also believed to retain a great deal of the nutrients and minerals within the vegetables that can be lost through other methods of cooking including boiling and frying.
